- 3 tbsp sriracha sauce
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- 2 cups cooked jasmine rice
- 2 cups cauliflower florets
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp sesame oil
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp chopped green onions
- 1 tbsp chopped cilantro
- 1 tsp sesame seeds
Instructions
- In a mixing bowl, whisk together sriracha, honey, soy sauce, minced garlic, lime juice, and sesame oil to create the marinade.
- Marinate the salmon in half of the mixture for 15 minutes.
- Preheat the oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper; roast on a baking sheet for 20-25 minutes until golden.
- Heat a non-stick skillet over medium-high heat. Sear the salmon for 2-3 minutes per side until caramelized.
- Add reserved marinade to the skillet and let it thicken over the salmon for about 1-2 minutes.
- Assemble bowls with jasmine rice topped with roasted cauliflower and glazed salmon.
