Treat your taste buds to a delightful vegan experience with these Sticky Tofu Bowls. This easy-to-make dish features crispy, golden tofu coated in a rich, sweet soy sauce glaze, served over fluffy rice and topped with fresh vegetables.


Ingredients

  • 1 14-oz package extra firm tofu
  • 2 tbsp cornstarch
  • ½ cup soy sauce (or coconut aminos)
  • 3 tbsp maple syrup
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 cloves minced garlic
  • 1 tbsp grated ginger
  • 3 cups cooked rice
  • 2 cups steamed edamame
  • 1 avocado
  • optional: sesame seeds and spring onions to garnish

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes and coat with cornstarch.
  2. Heat olive oil in a non-stick frying pan over medium heat and cook the tofu until golden brown and crispy.
  3. In a bowl or blender, mix together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
  4. Pour the sauce over the crispy tofu and cook until thickened.
  5. Assemble your bowls with rice as the base, topped with sticky tofu, steamed edamame, avocado slices, and optional garnishes like sesame seeds or spring onions.
