  • 3 cups fresh strawberries
  • 1/2 cup sugar
  • 1 lemon (juiced)
  • 1 lb. mascarpone cheese
  • 4 ounces cream cheese
  • 1 cup sugar
  • 3.5 oz strawberry pudding mix
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping

Instructions

  1. Prepare the strawberries by washing and slicing them. Combine in a bowl with lemon juice and 1/2 cup sugar; let sit for 10-15 minutes to develop flavor.
  2. In a large mixing bowl, beat mascarpone cheese, cream cheese, and sugar until smooth. Gradually add strawberry pudding mix and vanilla extract; mix until fully combined.
  3. Dip each Savoiardi cookie briefly into the strawberry sauce and layer them in a baking dish. Spread half of the cream mixture over the cookies. Repeat with another layer of dipped cookies and top with remaining cream mixture.
