- 1/2 cup basil leaves (julienned, plus extra for serving)
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz dried angel hair pasta
- 1/4 cup vegan parmesan cheese
- Balsamic drizzle (optional)
Instructions
- Cook the pasta: Boil salted water in a large pot and cook the angel hair pasta until al dente. Reserve ½ cup of pasta water before draining.
- Sauté: Heat olive oil in a skillet over medium heat. Add sliced garlic and sauté until fragrant, about 1 minute. Stir in halved tomatoes, cooking until softened (approximately 5 minutes).
- Combine: Add drained pasta to the skillet with tomatoes and garlic. Gradually mix in reserved pasta water until desired consistency is achieved. Season with crushed red pepper flakes, salt, and black pepper.
- Finish: Remove from heat and incorporate julienned basil leaves and vegan parmesan cheese. Drizzle with balsamic if desired before serving.
