- 1/4 cup milk
- 1 large egg
- 1/4 cup chopped green onions (optional)
- Vegetable oil for frying
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Peel, chop, and boil sweet potatoes until soft. Drain and mash until smooth.
- In a bowl, mix cornmeal, flour, sugar, baking powder, salt, garlic powder, and black pepper.
- In another bowl, whisk milk and egg; combine with mashed sweet potatoes and dry ingredients until just mixed.
- Heat oil in a deep fryer or skillet to 350°F (175°C). Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes per side until golden brown. Drain on paper towels.
- For the cinnamon butter dip, mix softened butter, powdered sugar, cinnamon, and a pinch of salt until smooth.
