  • 6 tablespoons sugar (divided)
  • 1 1/3 cups milk (divided)
  • 4 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon butter
  • 9-inch baked pâte sucrée or pâte sablee tart crust
  • 1 pint strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  1. Make the vanilla pastry cream: Scrape seeds from the vanilla bean and combine with sugar and milk in a saucepan. Heat until just boiling.
  2. Whip the egg yolks with remaining sugar until light and fluffy. Gradually add cornstarch mixed with milk, then pour in hot milk mixture.
  3. Return to saucepan and cook over low heat, whisking constantly until thickened.
  4. Remove from heat, stir in butter, and refrigerate until cold.
  5. Assemble the tart: Spread cooled pastry cream into the crust, top with sliced strawberries, and glaze with melted jam.
