  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • Fresh rosemary
  • Fresh thyme
  • 2 quarts beef stock
  • Flour (for both stew and dumplings)
  • Milk (for dumplings)
  • Sea salt
  • Black pepper

Instructions

  1. Chop vegetables: dice the onion, slice carrots, cube potatoes, and mince garlic.
  2. Brown the meat in a Dutch oven over medium-high heat; season with salt and pepper.
  3. Sauté onions and carrots until softened; add garlic for fragrance.
  4. Stir in flour, tomato paste, herbs, salt, pepper, and beef stock; return browned meat to pot.
  5. Bring to a boil, then reduce heat and simmer covered for 90 minutes.
  6. Prepare dumpling dough by mixing flour, baking powder, salt, butter, and milk.
  7. Drop spoonfuls of dumpling dough into the stew during the last 30 minutes of cooking.
