  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 cup white rice
  • 1 1/2 cups water
  • 1 tsp butter
  • 1 pinch salt
  • 1 tbsp sesame oil
  • 1 cup snap peas
  • 1 cup carrot matchsticks
  • 1 cup red cabbage (thinly sliced)
  • Salt & pepper to taste
  • 3 green onions (sliced)
  • Sesame seeds (for garnish)
  • 1 tbsp soy sauce or tamari
  • 1 tsp chili garlic sauce or sriracha
  • 2 cloves minced garlic
  • 1 tsp minced ginger
  • 2 green onions (sliced)
  • 1/2 tsp salt
  • 2 tbsp honey
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 400°F.
  2. Cook the rice by combining it with water, butter, and salt in a pot or rice cooker.
  3. In a large bowl, mix ground chicken, breadcrumbs, egg, soy sauce, garlic, ginger, green onions, and salt. Form into meatballs and place on a parchment-lined baking sheet. Bake for 18 minutes.
  4. Sauté snap peas, carrots, and cabbage in sesame oil until tender.
  5. Prepare the teriyaki sauce by mixing hoisin sauce, soy sauce, honey, and cornstarch; microwave until thickened.
  6. Toss baked meatballs in the teriyaki sauce and serve with rice and veggies.
