Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 3 tablespoons brown sugar
  • 1 tablespoon Sriracha
  • 2 cloves garlic, minced
  • 1 small Thai chile, minced
  • 1 & 1/2 pounds large shrimp, peeled and deveined

Instructions

  1. In a large resealable plastic bag, combine olive oil, lime juice, brown sugar, Sriracha, garlic, Thai chile, salt, and pepper. Seal and shake to mix.
  2. Add shrimp to the bag, seal again and toss to coat. Refrigerate for at least 30 minutes (ideally 1 hour).
  3. Preheat grill to high heat (450°F). Remove shrimp from marinade; transfer remaining marinade to a saucepan and boil briefly before simmering.
  4. Skewer shrimp (4-5 per skewer) and grill for about 2-3 minutes per side until opaque.
  5. Serve immediately with your choice of sides.
