- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 3 tablespoons brown sugar
- 1 tablespoon Sriracha
- 2 cloves garlic, minced
- 1 small Thai chile, minced
- 1 & 1/2 pounds large shrimp, peeled and deveined
Instructions
- In a large resealable plastic bag, combine olive oil, lime juice, brown sugar, Sriracha, garlic, Thai chile, salt, and pepper. Seal and shake to mix.
- Add shrimp to the bag, seal again and toss to coat. Refrigerate for at least 30 minutes (ideally 1 hour).
- Preheat grill to high heat (450°F). Remove shrimp from marinade; transfer remaining marinade to a saucepan and boil briefly before simmering.
- Skewer shrimp (4-5 per skewer) and grill for about 2-3 minutes per side until opaque.
- Serve immediately with your choice of sides.
