- 4–5 oz. ramen or rice noodles
- 1 Tbsp fresh lime juice
Instructions
- In a Dutch oven, heat oil over medium heat. Add onions, bell pepper, and carrots; sauté until tender (5-7 minutes).
- Stir in garlic, ginger, and red curry paste; cook for about 1 minute until fragrant.
- Add chicken broth, coconut milk, and fish sauce; season with salt and pepper. Simmer uncovered for 5 minutes.
- Stir in noodles; cook according to package instructions until tender.
- Finish with lime juice and chopped cilantro before serving hot.
