  • 1/3 cup red apple vinegar
  • juice of 1 lemon
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2/3 cup extra-virgin olive oil

Instructions

  1. Cook the orzo in salted boiling water according to package instructions until al dente. Drain and cool completely.
  2. In a large mixing bowl, combine cooled orzo with cucumber, feta cheese, cherry tomatoes, red onion, basil, and parsley if using.
  3. In a separate bowl, whisk together vinegar, lemon juice, honey, salt, pepper, and olive oil until smooth.
  4. Pour dressing over salad mixture and stir gently to combine. Refrigerate for at least one hour before serving to allow flavors to meld.
