  • 3 pounds yellow squash (sliced)
  • 1 white onion (diced)
  • 1 teaspoon salt
  • 8 ounces sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 1 sleeve Ritz crackers (crushed)
  • 2 tablespoons butter (melted)
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 350°F and grease a 9×9 baking pan.
  2. Heat canola oil in a skillet over medium-high heat. Sauté sliced yellow squash and diced onion with salt until softened (7–10 minutes). Drain excess moisture.
  3. In a mixing bowl, combine sour cream, cheddar cheese, parmesan cheese, and egg. Mix well.
  4. Gently fold in the drained squash mixture until evenly coated.
  5. Pour the mixture into the prepared baking pan.
  6. In another bowl, combine crushed Ritz crackers with melted butter and additional parmesan cheese; sprinkle over the casserole.
  7. Bake uncovered for 20–25 minutes until the topping is lightly browned.
