Description

This refreshing Tomato and Onion Salad is the perfect dish for summer gatherings or light meals.


Ingredients

  • 2 lbs. Roma tomatoes
  • 1/2 medium red onion
  • 1 small Serrano pepper (optional)
  • 1/3 cup parsley
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Halve the Roma tomatoes and slice them into thin half circles. Slice the red onion into thin quarter circles.
  2. Add heat and freshness: Thinly slice the Serrano pepper (seeds removed for less heat) and chop the parsley.
  3. Combine all ingredients in a large mixing bowl along with the apple cider vinegar, olive oil, salt, and pepper.
  4. Toss gently until well mixed. Serve immediately for optimal freshness or chill briefly before serving if desired.
