- 2 lbs. Roma tomatoes
- 1/2 medium red onion
- 1 small Serrano pepper (optional)
- 1/3 cup parsley
- 1 tbsp. apple cider vinegar
- 1 tbsp. olive oil
- Salt and pepper to taste
Instructions
- Prepare the vegetables: Halve the Roma tomatoes and slice them into thin half circles. Slice the red onion into thin quarter circles.
- Add heat and freshness: Thinly slice the Serrano pepper (seeds removed for less heat) and chop the parsley.
- Combine all ingredients in a large mixing bowl along with the apple cider vinegar, olive oil, salt, and pepper.
- Toss gently until well mixed. Serve immediately for optimal freshness or chill briefly before serving if desired.
