  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely diced
  • 1/4 cup Kalamata olives (optional)
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 cup Greek yogurt
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • juice of 1 lemon
  • 1 teaspoon white vinegar
  • salt and black pepper to taste

Instructions

  1. In a bowl, whisk together Greek yogurt, minced garlic, olive oil, lemon juice, white vinegar, salt, and pepper. Mix in grated cucumber and chill.
  2. In a large bowl, combine chickpeas, diced cucumber, cherry tomatoes, red onion, olives (if using), and feta cheese.
  3. Add chopped dill and parsley to the salad mixture.
  4. Pour the tzatziki dressing over the salad and toss until well combined.
  5. Chill for at least 30 minutes before serving.
