  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)

Instructions

  1. Begin by creaming softened butter with granulated and brown sugars until fluffy. Mix in eggs and vanilla extract.
  2. Gradually add dry ingredients to each dough flavor (chocolate and pink) until just combined.
  3. Chill both doughs for about 30 minutes.
  4. Preheat the oven to 350°F (175°C). Shape the chilled dough into balls, pressing a well in the center for ganache filling.
  5. Bake on parchment-lined sheets for 10–12 minutes, then cool on a wire rack.
  6. Prepare the ganache by heating heavy cream and combining it with chopped chocolate until smooth.
  7. Fill cookie centers with ganache, then decorate as desired with toppings.
