  • ½ cup + 1 Tbsp neutral oil

  • 1 cup oat milk
  • 1 ½ cups fresh blueberries

Instructions

  2. In a bowl, mix flour, baking powder, and salt; set aside.
  3. Toss blueberries in 1 tablespoon of flour to coat.
  4. In a large bowl, whisk together sugar, oat milk, and oil until smooth.
  5. Stir in lemon juice, zest, and vanilla until combined.
  6. Gradually add dry ingredients to the wet mixture; mix until just combined.
  7. Gently fold in floured blueberries.
  8. Pour batter into prepared pan and bake for 45–50 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for at least 30 minutes before transferring to a cooling rack.
