- 1 ½ pounds chicken breast (cut into cubes)
- 1 cup diced onion
- 5 cloves garlic (minced)
- 1 tablespoon chopped jalapeño (approximately 1 jalapeño pepper)
- 1 packed cup cilantro leaves (roughly chopped, divided)
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- 4 15.8-ounce cans white beans (drained)
- 6 cups chicken broth or stock
- 16 ounces frozen corn
- 2 4-ounce cans diced green chile peppers (undrained)

Instructions
- In a large pan over medium-high heat, heat 2 tablespoons of olive oil. Sauté cubed chicken until browned (3-5 minutes) and set aside.
- In the same pan, add remaining oil and sauté diced onion, minced garlic, and chopped jalapeño until softened (about 5 minutes).
- Stir in ½ cup chopped cilantro and transfer everything to a large pot.
- Add spices (cumin, oregano, paprika, cayenne pepper, black pepper, salt) to the pot; cook for 2-3 minutes.
- Pour in white beans and chicken broth; mix well.
- Simmer for at least 30 minutes (up to 2 hours), mashing some beans for creaminess.
- Stir in cooked chicken, frozen corn, and diced green chiles; simmer until heated through (10–15 minutes).
- Before serving, mix in remaining cilantro and serve warm.
