Ingredients

Scale
  • 3/4 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup chopped strawberries
  • 1/4 cup blackberries
  • 2 cups all-purpose flour
  • 1/2 cup oat flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1/2 cup cold water
  • 1 teaspoon lemon juice
  • 1/2 cup pure cane granulated sugar
  • 3 tablespoons peeled chopped pears
  • 1/4 cup plain unsweetened applesauce
  • 2 tablespoons cornstarch
  • 1 egg (for egg wash)
  • 12/3 cups powdered sugar
  • 2 to 4 teaspoons milk
  • Neon violet and sky blue food gel color

Instructions

  1. Prepare the filling by combining all berries with lemon juice and sugar in a bowl. Stir in chopped pears and applesauce, then add cornstarch to thicken. Set aside.
  2. For the dough, mix all-purpose flour, oat flour, sugar, and salt in a bowl. Cut in cold butter until crumbly, then gradually add cold water to form the dough. Chill for at least 30 minutes.
  3. Roll out the dough and cut into rectangles. Place filling in the center of each rectangle, top with another rectangle of dough, and seal edges with a fork.
  4. Preheat oven to 375°F (190°C) and bake on parchment-lined sheets until golden brown.
  5. Cool and decorate with icing made from powdered sugar and milk.
