- 4 large eggs (separated)
- 1/2 cup granulated sugar

- 1/4 teaspoon salt
- 8 ounces bittersweet or dark chocolate (chopped)
- 1 tablespoon unsalted butter (room temperature)
- 1 teaspoon vanilla extract
- Pinch salt
- 3/4 cup heavy cream
- 1 cup heavy cream
- 1/4 cup confectioners’ sugar (powdered sugar) (more or less, to taste)
- 1 teaspoon pure vanilla extract (or vanilla bean paste)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat egg yolks and sugar until pale; mix in vanilla. Sift flour, cocoa, baking powder, espresso powder, and salt before folding into yolk mixture.
- In a separate bowl, whip egg whites to stiff peaks and gently incorporate into the batter.
- Spread batter evenly on the prepared baking sheet and bake for about 10 minutes until springy.
- Roll the baked cake in parchment while warm and let cool completely.
- Prepare ganache by melting chocolate with butter and vanilla; cool slightly before use.
- Whip cream with confectioners’ sugar until firm peaks form; spread over cooled cake before re-rolling.
