Instructions

  1. Wash the lemons thoroughly and cut them into quarters, removing any seeds.
  2. In a pot, combine the lemon pieces and water; bring to a boil over medium heat and simmer for 30 minutes until tender.
  3. Strain the mixture through a fine mesh sieve into another pot, pressing on the solids to extract juice.
  4. Stir in the sugar over low heat until fully dissolved.
  5. Increase heat to medium-high and bring to a rolling boil; cook for 15-20 minutes until thickened.
  6. Pour hot jam into sterilized jars and seal tightly; allow to cool at room temperature.
