  • 1 ½ cups frozen fire-roasted corn, thawed
  • 1 red bell pepper, diced
  • ¼ cup red onion, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, minced
  • Zest and juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup or agave
  • 2 cloves garlic, crushed
  • ½ tsp ground cumin
  • 12 tsp smoked paprika or chili powder
  • Salt to taste

Instructions

  1. In a mixing bowl, combine black beans, corn, cherry tomatoes, red onion, red bell pepper, and cilantro.
  2. In a separate jar or bowl, whisk together lime zest and juice, olive oil, vinegar, maple syrup/agave, garlic, cumin, smoked paprika/chili powder, and salt.
  3. Pour the dressing over the bean mixture and toss gently until well combined.
  4. Cover and refrigerate for at least one hour to let the flavors meld before serving.
