Ingredients
- 2 zucchini squash (sliced thin)
- 4–5 tomatoes (sliced)
- 1–1/2 cups shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 3/4 cup fine bread crumbs
- 2 tablespoons butter (melted)
- 2 teaspoons garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
- In a small bowl, mix mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper until well combined.
- Layer zucchini slices at the bottom of the baking dish and sprinkle with 1/4 of the cheese mixture. Add sliced tomatoes and another layer of cheese mixture. Repeat until all ingredients are used.
- Combine melted butter with breadcrumbs and sprinkle over the top.
- Cover with foil and bake for 25 minutes. Remove foil and continue baking for an additional 20 minutes until golden brown.
