  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 3/4 cup fine bread crumbs
  • 2 tablespoons butter (melted)
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In a small bowl, mix mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper until well combined.
  3. Layer zucchini slices at the bottom of the baking dish and sprinkle with 1/4 of the cheese mixture. Add sliced tomatoes and another layer of cheese mixture. Repeat until all ingredients are used.
  4. Combine melted butter with breadcrumbs and sprinkle over the top.
  5. Cover with foil and bake for 25 minutes. Remove foil and continue baking for an additional 20 minutes until golden brown.
