  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup salted butter (diced)
  • 5 tablespoons butter (softened)
  • 1 cup granulated sugar
  • 16 oz. cream cheese (softened)
  • 2 large eggs
  • 1 cup fresh or frozen blueberries
  • 4 tablespoons milk
  • 1/3 cup brown sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 13 x 9 inch baking pan with aluminum foil and lightly spray it with non-stick cooking spray.
  3. In a mixing bowl, combine flour, powdered sugar, and diced butter until crumbly. Press into the bottom of the prepared pan.
  4. Bake for about 15 minutes until lightly golden.
  5. In another bowl, beat softened butter, brown sugar, granulated sugar, and cream cheese until smooth. Add eggs one at a time, followed by milk, lemon juice, and vanilla extract; mix until combined.
  6. Gently fold in blueberries and pour over the baked crust.
  7. Bake for an additional 30 minutes until set but slightly jiggly in the center.
  8. Allow to cool completely before lifting out using the foil edges and cutting into squares.
