Ingredients
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup salted butter (diced)
- 5 tablespoons butter (softened)
- 1 cup granulated sugar
- 16 oz. cream cheese (softened)
- 2 large eggs
- 1 cup fresh or frozen blueberries
- 4 tablespoons milk
- 1/3 cup brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 13 x 9 inch baking pan with aluminum foil and lightly spray it with non-stick cooking spray.
- In a mixing bowl, combine flour, powdered sugar, and diced butter until crumbly. Press into the bottom of the prepared pan.
- Bake for about 15 minutes until lightly golden.
- In another bowl, beat softened butter, brown sugar, granulated sugar, and cream cheese until smooth. Add eggs one at a time, followed by milk, lemon juice, and vanilla extract; mix until combined.
- Gently fold in blueberries and pour over the baked crust.
- Bake for an additional 30 minutes until set but slightly jiggly in the center.
- Allow to cool completely before lifting out using the foil edges and cutting into squares.
