  • 1 cup granulated sugar

  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into a fine powder.
  3. In a mixing bowl, cream together salted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  4. Gradually incorporate the flour, baking soda, half of the strawberry powder, and kosher salt until combined. Mix in the strawberry jam.
  5. Roll dough into balls and place on the prepared baking sheet. Bake for 8 minutes; then lightly tap the sheet to flatten cookies slightly before baking for an additional 2-3 minutes until golden.
  6. For the icing, combine cream cheese, powdered sugar, hot milk, remaining strawberry powder, and vanilla extract in a bowl. Adjust consistency with more milk if needed.
