  • 1 red bell pepper, chopped
  • ½ medium onion, finely chopped
  • 3 tsp taco seasoning
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • ½ tsp salt (omit if using salted taco seasoning)
  • 2 cups jarred tomato salsa
  • 1 can black beans (19 oz / 590 ml), rinsed and drained
  • 6 large tortillas
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, brown the ground beef with red bell pepper and onion until tender.
  3. Stir in taco seasoning and salsa; mix well and remove from heat.
  4. In a greased 9×13-inch baking dish, layer two tortillas followed by one-third of the beef mixture and one-third of the cheese.
  5. Repeat layering two more times, ending with tortillas topped with remaining beef and cheese.
  6. Bake for 15–20 minutes until heated through and cheese is bubbly.
  7. Let cool slightly before slicing into servings.
