  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 & 1/4 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/4 tsp baking soda
  • Pinch of nutmeg
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Mix in egg and vanilla until combined.
  3. In another bowl, whisk together flour, oats, cinnamon, baking soda, nutmeg, and salt. Gradually add to wet mixture until just combined.
  4. Scoop dough into eight equal balls on the prepared baking sheet and flatten slightly.
  5. Bake for about 10 minutes until edges are golden but centers remain soft.
  6. Allow to cool on the baking sheet for 20 minutes before transferring to a wire rack.
