Ingredients
- 1/2 cup unsalted butter
- 1/4 tsp. salt
- 1/3 cup granulated sugar
- 2 Tbsp. powdered sugar
- 1 Tbsp. whole milk
- 1/2 tsp. vanilla extract
- 1 cup all-purpose flour
- 1/4 tsp. baking soda
- 3 1/2 cups shredded sweetened coconut
- 15 oz. caramels
- 2–3 Tbsp. heavy cream
- 10 oz. dark chocolate melting wafers
- 1 tsp. oil
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, sugars, salt, milk, and vanilla until smooth. Add flour and baking soda; mix until combined.
- Roll out dough to ¼ inch thick and cut into desired shapes. Bake for 12-15 minutes until golden.
- Toast coconut in a skillet over medium heat until golden brown.
- Melt caramels with heavy cream over low heat until smooth.
- Spread caramel on cooled cookies and top with toasted coconut.
