  • Fresh ground pepper
  • 1 1/4 tsp kosher salt
  • 2 packed tbsp parsley (finely chopped, no stems)
  • 2 packed tbsp chopped cilantro
  • 2 tbsp red onion (finely chopped)
  • 1 clove garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp water
  • 1/4 tsp kosher salt
  • 1/8 tsp fresh black pepper
  • 1/8 tsp crushed red pepper flakes (or more to taste)

Instructions

  1. Season the meat with kosher salt and fresh ground pepper.
  2. In a mixing bowl, combine red onion, apple cider vinegar, olive oil, and salt. Let sit for 5 minutes.
  3. Stir in parsley, cilantro, garlic, water, black pepper, and crushed red pepper flakes; refrigerate until ready to use.
  4. Assemble skewers with beef cubes and vegetables.
  5. Grill skewers over high heat for 2-3 minutes per side until desired doneness.
