Ingredients
- 800g strawberry purée
- 760g sugar
- 20g pectin
- 10g tartaric acid
- 2 tsp Tabasco
- 50g caster sugar
Instructions
- In a large pan, combine strawberry purée with 720g of sugar; bring to a boil.
- Mix pectin with 40g of sugar in a bowl. Once the purée boils, add the pectin mixture to the pan.
- Heat until the mixture reaches 104ºC, then remove from heat and stir in tartaric acid and Tabasco.
- Line a baking tray with cling film or nonstick spray. Pour the mixture into the tray and refrigerate for at least 4 hours to set.
- Once set, cut into 2cm squares and roll each in caster sugar before serving.
