- 2 pounds skinless boneless chicken breast
- 2 teaspoons Masaman curry paste
- 1/2 cup creamy peanut butter
- 3/4 cup coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1/2 cucumber (sliced)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cayenne pepper
- 1.5 tablespoons minced garlic
- 2.5 teaspoons sweet soy sauce
- 2.5 teaspoons sugar
- 1/4 teaspoon white pepper
- 2 tablespoons apple cider vinegar
- 2 tablespoons ground peanut
- salt to taste
Instructions
- Slice chicken into 1-inch wide strips. In a mixing bowl, blend marinade ingredients (curry paste, turmeric, coriander, cayenne pepper, garlic, fish sauce, soy sauce, sugar, white pepper, coconut milk) until smooth. Coat the chicken thoroughly and marinate for at least 30 minutes.
- For the peanut sauce, combine all ingredients in a saucepan over low heat. Whisk until smooth and simmer briefly before removing from heat.
- Thread marinated chicken onto skewers and grill for about 4 minutes on each side until cooked through.
