  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • 125g dried breadcrumbs
  • 75g mature cheddar, grated
  • 1 egg
  • 50ml single cream
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • ½ teaspoon sugar
  • ½ teaspoon baking powder
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 50g cream cheese

Instructions

  1. In a large pot, heat olive oil and butter over low heat. Add the onion and sweet potato; cook for 5-10 minutes until softened.
  2. Stir in the garlic and add the chopped tomatoes along with the chicken stock. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  3. Prepare dumpling mixture by combining breadcrumbs, cheddar cheese, baking powder, mustard powder, egg, and cream cheese in a bowl.
  4. Blend the soup until smooth and return to a simmer. Shape dumplings into balls and drop them into the soup; let simmer for about 10 minutes without stirring.
  5. Serve hot with your choice of toppings.
