  • 2 large eggs
  • 12 Tbsp unsalted butter, melted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups shredded zucchini
  • 1 cup chopped pecans
  • For the frosting: 4 Tbsp unsalted butter
  • 1/2 cup brown sugar
  • 2 Tbsp milk or cream
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Butter a 9×9 baking pan and line it with parchment paper.
  2. In a mixing bowl, whisk together eggs, melted butter, granulated sugar, brown sugar, salt, cinnamon, nutmeg, and vanilla extract until combined.
  3. Stir in baking soda and then fold in flour until just incorporated.
  4. Gently mix in shredded zucchini and chopped pecans until evenly distributed.
  5. Spread the batter into the prepared pan and bake for approximately 35-45 minutes or until set in the center.
  6. While cooling slightly, prepare the caramel frosting by melting butter in a saucepan over medium heat. Stir in brown sugar and milk until it boils lightly. Remove from heat and whisk in powdered sugar until smooth.
  7. Pour the warm frosting over the cooled zucchini bars before slicing.
